Rudi Simon
Veronica “Rudi” Simon is a recent graduate of Sustainable Development from Uppsala University. Rudi’s thesis researched the interplay of food labels and agricultural requirements on sustainable initiatives in ecological farming.
She has worked with Legacy17 on projects regarding food waste as both an intern and collaborator. She is the current President of Zero Waste Uppsala, whose mission is to reduce all forms of waste, and help educate people as to the importance of reusing and recycling.
Rudi is also an accomplished artist and graphics designer.
